San Agustin is a town and municipality in the southern Colombian Region of Huila. The town is located 227 km away from Neiva, the capital of Huila, and has a long history of coffee cultivation. This area is a commercial and attractive location, with an economy based on technical coffee growing, traditional agriculture, commerce, handicraft, and tourism. The farms, which are located between 1750 and 1900 metres above sea level, provide the ideal location for growing Colombia and Caturra coffee varietals. The harvest season runs from May to July, followed by October to December. They mostly produce washed coffees that come with rainforest certification.
For this specific estate, a group of 30 modest coffee farmers and their families from several municipalities have come together to bring this massive coffee plantation to fruition and are dedicated to grow organic certified coffees. These families collectively own 105 hectares of land (30 farms), which they cultivate and maintain on a daily basis. Each family has an average of 3 hectares of Arabica coffee growing on their fields throughout the year.
The drying procedure is done in the sun with plastic and shadow film for 15 to 20 days, this is also environmentally more sustainable. The fermentation of 24 to 48 hours follows the drying until the coffees are finally ready to go through washed processing. Each farm processes the coffee individually, with similar hours of fermentation and processes.
