Located in the volcanic Ilamatepec mountain, this region has an “origin denomination” because of its special geography and high-quality coffee. El Cocal Farm has been producing specialty coffee for 30 years, and is also home to many native trees.
The producer is the Alfaro Castaneda family: six siblings who are part of the Agricola San Agustín company, which owns the El Cocal farm and El Carmen Beneficio. These are where they process all the coffee from their own farms and for more than 45 other producers in the region. These coffees are processed separately, with total traceability, and the company also provides advice on how to market the coffees. The current owners are the 4th generation of coffee growers in their family. Their ancestors were pioneers in the specialty coffee industry in El Salvador. They were part of the Izalco Coffee Project that commercialised specialty coffee.
The Bourbon and Pacas grown here are carefully grown to ensure the development of every cherry and to make the trees strong enough to prevent roya and pest attacks. First, a soil study is carried out, and based on the results, a nutrition and fertilization plan is designed by an agricultural engineer. The resulting coffees are juicy, with a vibrant acidity. They have a tropical, fruity flavour profile, with notes of pineapple and milk chocolate.
