La Cabaña Farm is located in the upper part of the district of Brussels/Colombia, in a location that is difficult to access due to its high mountain geographical conditions. The farm was initially acquired through an inheritance from William Ortiz’s parents, where traditional varieties were first planted; however, around the age of 16, William and his brother learned more about the coffee business through cupping courses they took locally and saw potential. On the farm, they started planting exotic coffee varieties like Bourbon Rosado, Ombligón, Pacamara, and Bourbon Amarillo, resulting in 90% of the farms producing exotic coffee.
William Ortiz is a coffee farmer who has been doing tasks on the farm from a very young age. During his student days, he became more interested in experimenting with fermentation processes. He began to plant different varieties on the farm and managed high-quality coffees through controlled harvesting and fertilization. After a period of trial and error, he began to experiment with the natural coffee process and anaerobic fermentation; he managed to give his coffee the complexity he wanted, enhancing the attributes of a high-altitude coffee more by the process involved. PRODUCER As a result of all this work carried out, La Cabaña farm has participated in several Colombia Cup of Excellence competitions and has always been among the 30 finalists.
This particular lot is composed of the Caturra variety, grown at 1700 meters above sea level. It is a sweet and spicy coffee with floral and citrus notes and a very creamy body that represents the flavors of its region very well.
